Compass Group UK & Ireland has launched a culinary apprenticeship scheme in collaboration with celebrity chef Marcus Wareing.
‘Forward with Marcus Wareing’ is an enhanced programme that runs alongside a Level 4 Senior Culinary Chef or Level 5 Operations Departmental Manager apprenticeship standard, delivered in partnership with national hospitality training provider HIT Training.
Wareing, well-known to TV viewers as a judge on BBC TV’s Masterchef: The Professionals, has helped to devise the course. Topics to be studied include sustainability, creating a more diverse kitchen team in terms of ethnicity and gender, developing mental first-aider skills, and mentoring and analysis of different leadership styles and outcomes. It also involves extracurricular activities across the UK to deliver real, practical experiences to a group of chefs, to challenge the senses and to reconnect with the elements.
Wareing said: “‘Forward…’ is a new cutting-edge culinary training programme designed to build skills, grow knowledge and expand imagination, so candidates can take their career to truly exceptional places. Candidates will be able to explore every aspect of the modern kitchen, from culture to commerce, question assumptions and challenge conventions with guidance from myself.”

Dozens of chefs from across the Compass Group underwent a rigorous selection process, including being interviewed by a panel of judges led by Marcus. The first cohort of 15 chefs starts the scheme at the end of this month.
