Kudos Catering has secured a contract with the Civil Aviation Authority (CAA) that will see the company provide bespoke menus in the newly introduced brand and concept for Gatwick's staff restaurant the Aviator, and its café The Coffee House.
The caterer's ethos revolves around creating meals using "only the best locally sourced ingredients". It aims to combine these with the influence of international cuisine, it says.
Primarily tasked with feeding staff, Kudos will bring a number of recipes to the CAA's restaurant and café including slow-roasted shoulder of Sussex Downs lamb with rosemary and baby onions, vegetable and sweet potato mini hot pot, and Goan fish curry with brown rice and sambals. Menus will also cater to quick snack choices for employees on the go, including pork and apple pasty, classic mini fish pie, and lemon-scented breaded fish goujons.
Kudos food director David Cavalier said: "We saw the Aviation restaurant as a blank canvas waiting to be brought to life by some simple but all-important enhancements, including a daily changing menu that offers fresh daily options alongside trusted favourites."
